60% Roussane, 15% Clairette, 15% Picpoul, 10% Grenache blanc.

SOIL

Stony, chalky soils with 32% active limestone.

HARVEST

Hand picking at optimum maturity in 15/20 kg baskets in the cool of the morning. Immediate transportation to the winery.

WINEMAKING

Grape varieties vinified separately. Whole bunch pressed in a pneumatic press then left to settle by gravity in stainless steel tank for 24 hours before racking. Fermented in lightly toasted French oak barrels from the Vosges mountains with 25% new wood.

MATURING

Aged for 12 months in barrel on fermentation lees with regular stirring.

Deep gold.

 

 

Intense nose of white fruits, honeysuckle, preserved lemon and fennel. Strong mineral presence.

 

 

Full bodied, rich and complex, supported by a backbone of refreshing acidity. Tightly structured finishing long with aniseed notes.

 

 

Food and Wine Matching : Flavorsome seafood dishes such as lobster thermidor, turbot in white butter sauce, hot oysters with sorrel and champagne sabayon”¦ Poultry and white meats with cream and mushroom based sauces.
