HARVEST
Picking at optimum maturity to maximize ripe fruit flavours whilst preserving freshness and acidity.
WINEMAKING
Grape varieties vinified separately in stone tanks from the 18th century. Gentle, temperature controlled maceration for 3 weeks to optimize fruit and to allow for the extraction of only the softest tannins.
MATURING
Aged for 18 months in cement vats allow for a slow maturation and stabilization of the wine. Bottled by gravity with minimal filtration.
Deep ruby
Highly aromatic nose of red berries, blackcurrant, cocoa and black olives.
Medium bodied, soft silky tannins finishing fruity and long with a touch of minerality
All grilled fish and meats – particulary those barbecued with vine shoots – Moroccan tagines, Chili con carne, vegetable gratins”¦. A perfect match with antipasti.
