80% Chardonnay and 20% Viognier. SOIL Stony, chalky soils with 32% active limestone.

HARVEST

Hand picking at optimum maturity in 15/20 kg baskets in the cool of the morning followed by immediate transportation to the winery.

WINEMAKING

Whole bunch pressed in a pneumatic press. Settling by gravity for 48 hours before racking directly to one year old Burgundy barrels.

MATURING

Aged for 6 months on fermentation lees with regular stirring. Blended and bottled in March

 

Pale gold

 

 

Highly perfumed nose with aromas of apricot, white flowers and honey.

 

 

Medium bodied on palate, fresh, finishing with notes of stone fruit and citrus.

 

 

Ideal with all seafood: shellfish platters, grilled fish, stuffed or fried calamari, mussels, seafood risotto”¦. Works equally poultry, either simply grilled or with cream or curry based sauces. A perfect match with goats cheese.
