15 years for Grenache and Syrah, 40 years for the Cinsault.

HARVEST

Hand picking in 15/20 kg baskets.

WINEMAKING

Grape varieties vinified apart in stone tanks from the 18th century and cement vats. Gentle maceration of 3 weeks for the Grenache and Cinsault to accentuate the fruit, longer maceration for the Syrah which provides the tannin, structure and backbone of the blend.

MATURING

In 2 year-old French oak barrels for Syrah and Cinsault. Stainless steel tanks for Grenache.

Red with purple hues.

Very Mediterranean nose of black fruits interlaced with notes of the local vegetation, thyme, fennel, rosemary all wild flowers.

Medium to full bodied, an explosion of blackcurrant and blackberry backboned by firm but elegant tannins. A long, round fresh finish.

Poultry, red and white meats simply grilled or simmered with aromatic herbs ““ rabbit saddle with rosemary, coq ou vin, provencal beef stew. Also pairs extremely well with Italian cuisine such as pastas with meat bases sauces, saltimbocca,”¦..
