GRAPE VARIETIES

50% Grenache blanc, 30% Roussane, 10% Clairette du Languedoc, 10% Viognier.

SOIL

Stony limestone and Villafranchien (quartz pudding stones on a matrix of clay and limestone).

AVERAGE VINE AGE

30 years for Clairette and Grenache, 10 years for Roussane and Viognier.

YIELD

30 hl/ha

HARVEST

Hand picking at optimum maturity in 15/20 kg baskets in the cool of the morning then transferred immediately to the winery.

WINEMAKING

Grape varieties vinified separately. Whole bunch pressed in a pneumatic press then left to settle in stainless steel tank for 24 hours before racking. Roussane and Clairette fermented in 2 year old Burgundian barrels, Grenache in stainless steel tank.

MATURING

Regular stirring and ageing on fermentation lees in barrel and tank. Racked, blended and bottles in March.

Pale gold.

 

 

Intense and powerful nose of garrigue (local vegetation of fennel, thyme and rosemary) jasmine, citrus fruits and honey.

 

 

Medium bodied. Aromas following through on palette and supplemented by notes of menthol and aniseed. A typical Mediterranean wine, fruity and round with a refreshing finish.

 

 

A perfect seafood wine: shellfish, tartar, grilled fish, salmon”¦.. Matches also with poultry and Asian flavours such as salt and pepper squid, sweet and sour prawns or Tha௠green curry.
