Basaltic for Syrah and Villafranchien (quartz pudding stones on a matrix of clay and limestone) for Grenache and Mourvèdre.

HARVEST
Hand picking at optimum maturity in 15/20 kg baskets then transported in small batches immediately to the winery.
WINEMAKING
Grape varieties vinified separately. 9 weeks of long and gentle maceration for Syrah and Mourvèdre ; 6 weeks for the Grenache. Pressing by pneumatic press. Only the free run is retained.
MATURING
Syrah and Mourvèdre matured for 24 in new oak 600 liter casks. Grenache is aged in stainless steel tank to preserve the fruit.
Bottling by gravity. Non filtetred.
Dark ruby.
Powerful. Flinty, blackcurrant, licorice and cedar wood
Full bodied with juicy red fruits structured by ample fine grained tannins and a strong minerality. Long, fresh finish.
Game (pigeon, partridge, woodcock and venison). Grilled red meats, or those simmered with wine and herbs.
